"Two main questions for right now: That Air Dock. The documentation that
came with it says you need to be running 7.1 or later, but  it talks about
the network panel and other things which I believe got wiped away with the
later os's. The 6500 doesn't even see the dock when it is connected to the
serial and the passthru adb.  I think I need a later version of the airdock
driver or the airpath software, and I think there is one. Does anyone have
one of these running?"

I have used the Airdock with my powerbook 5300 and a desktop machine. I
have a set of instructions, dated 1997, from Farallon which talk about
using system 7 or later. They give instructions for:
1. installing if the desktop machine is using Classic networking (if the
desktop is using  a network with LocalTalk or Ethernet cabling and it will
probably have the Network Control Panel and possibly a MacTCP Control
Panel);
2. installing if the desktop is not connected to a network and external
devices like the  printer and modem and are connected with serial cables;
3. if your desktop is using Open Transport and has the AppleTalk and TCP/IP
Control Panels.

Then I have another set of instructions, dated 1998, from Netopia (formerly
Farallon). In the listed requirements these instructions say that the
Airdock can be used with a desktop machine with an ADB port, system 7.0 or
higher, or system 8.1 or higher with Open transport 1.3 or higher
recommended.

Hope this helps getting you set up. You could email Netopia (or whoever
owns Farallon now to ask for set up advice and a copy of the later version
of the Airpath software)
