Why doesn't the widget shrink to fit the text it contains?
Because that would give you a GUI that would "flicker".

Is there any way of printing, or exporting to postscript, a gnome canvas?
I've looked everywhere I can think of on the docs and can't find any mention of it.

The ability to print the contents of the canvas is a planned feature. I
believe it is planned for Gnome 2.0.
