May you change the style itself and set the same style to all layers.
You can change i.e. color of lines by "type of line" / attribute values
so you can use one style for multiple layers.

after a restart of QGIS I can not edit a postgis layer anymore, I used
it a bunch of weeks without problems.
If I add this layer again to the project, than I can.
But I can not replace the new against the old one because of a lot of
relations to other layers.

I made a copy of a layer from gpkg to postgresql.
I saved the symbol properties to a symbol and 2nd copied the symbology
from old to new layer.
But the 2nd new layer's lines are much bigger than the old ones. Text,
formulares are the same and correct.
