Can you supply a small subset of your data? The procedure should not
be difficult, and I'd be willing to try some methods and show how

I don't know why you're having trouble with the processing toolbox,
but regarding IDW interpolation, you can do it straight in the
Raster menu, Raster->Analysis->Grid (interpolation).
This uses the gdal_grid utility
