Julien, If you are using stunnel try the stunnel users list http://www.onsight.com/faq/stunnel/stunnel-faq-9.html But one quick thing you can do is stunnel -D 7 -f -d 993 -r localhost:143 (for IMAP). The ``-D 7'' puts stunnel into debug mode and the ``-f'' keeps it in foreground mode, so it will log directly to your current terminal. Stunnel has very good error messages. Check several things. Permissions on the certificate.
