polymap from a SpatialPolygonsDataFrame, let's stay US states.
how can I accomplish this task? can you point me to the right direction?

Unsurprisingly, the maps package would be a good place to start.
There have been a number of fairly recent discussions on this list and
the r-help list about how to color entities according to some scheme.
