One of my parents from work said she was fixing Italian Beef for supper, I
had to google it and see what it was. So here is one recipe I found. I'll ask
her when I have more time to talk just what her recipe is.
Italian Beef
3 pounds beef chuck roast
3 (1 ounce) packages dry Italian sal
Zesty Mozzarella Chicken
1 egg white, lightly beaten
2 tbsp milk
1 c. dry breadcrumbs
2 tbsp grated Parmesan cheese
1/4 tsp salt
1/4 tsp pepper
1/4 tsp garlic powder
1/4 tsp cayenne pepper
1/4 tsp dried oregano
8 boneless, skinless chicken breast halves
1/4 c. butter or margarine
1 8-oz. can toma
Vegetable and Chicken Souffle
8 slices bread, crust removed
1/2 onion, grated
1/2 green pepper, chopped
1/2 c. chopped celery
1 lb. cooked, diced chicken
1 can cream of mushroom soup, undiluted
1-1/2 c. milk
3 eggs, beaten
1/2 c. mayonnaise
1/2 c. Cheddar cheese, grated
1 tsp salt
1/4 tsp pepper
Sweetheart Casserole
6 oz. uncooked fettuccine
1 c. broccoli florets (fresh or frozen)
1 10-3/4-oz. can cream of mushroom soup
1/2 c. milk
1/2 c. grated Parmesan cheese
2 c. cubed, cooked turkey
1/4 tsp freshly ground pepper
Prepare fettuccine according to package directions and add broc
Need whipped cream but don't have an electric mixer? Put the cream in a bowl
with a tight lid (Tupperware works well) and shake vigorously until whipped.

1 cup sliced strawberries
1/2 tsp. lemon juice
1/2 tsp. lemon zest
4 T sugar

1 cup low fat milk
2 tsp. vanilla extract
1/4 tsp. baking powder
4 egg whites
2 eggs
BEANS PEAS AND POTATOES
3 cups fresh green beans cut into 2-inch lengths
2 cups fresh peas
6 small new potatoes scrubbed and quartered
Evaporated milk
2 tablespoons butter
1 teaspoon salt
1 teaspoon freshly ground black pepper
Place green beans in a covered pot with 2 inches of water then cook
