Lemon-Basil Couscous

 

Ingredients

1 package (10 oz.) couscous

1 can (15 oz.) garbanzo beans (chick peas), drained and rinsed

1/4 C. chopped fresh basil

1/2 of a medium-sized red onion, chopped

1 medium-sized tomato, chopped

1/2 C. lemon juice

1-1/2 tsp. salt

1/2 tsp. black pepper

 

Directions

Prepare the couscous according to the package directions. Place

the couscous in a large bowl to cool.

Add the remaining ingredients and toss until well combined.

Cover and chill for at least 1 hour before serving.

 

12 to 16 servings.
