Serves 3 or 4

6 eggs
1/2 cup sour cream
1/2 cup shredded cheddar cheese
1 large firm tomato peeled and chopped and drained of juice
2 green onions chopped
2 tablespoons butter
salt and pepper to taste

Whip eggs and sour cream. Then add the cheese, tomatoes and 
onions. Place
butter in a 8 or 9 inch glass pie plate. Melt on high 1 minute. 
Move dish
around to cot bottom evenly. Pour mixture in to plate. Sprinkle 
with salt
and pepper. Cook on high 5 to 6 1/2 minutes: stirring every 
minute.
Remember eggs continue to cook so remove from microwave while 
still slightly
soft. By the time you can eat them they will be perfect.
