Raisin coconut loaf Categories: Dessert Cake/cookie Yield: 1 loaf
Table with 3 columns and 9 rows 3 c Flour, all-purpose 1 tb Baking powder 1 c Sugar 1 ts Salt 1 c Raisins, dark or golden 1 c Coconut, flaked; toasted 1 Egg 1 ½ c Milk 1 ½ ts Vanilla extract table end Combine flour, baking powder, sugar, and salt. Stir in raisins and coconut. Beat egg until foamy and mix with milk and vanilla. Stir into dry ingredients and mix thoroughly, but do not beat. Pour into greased 9x5x3" loafpan, and bake at 350 degrees for 1 hour and 10 minutes.
