Your hostname isn't stored in /etc/HOSTNAME, it's stored in
/etc/sysconfig/network. /etc/HOSTNAME is used on other distributions, but
isn't *read* by the RHL init scripts. At least, not currently :)

In RH you can run the utility "setup" (minus quotes) as root & directly
configure your network, besides
the files are stored in /etc directory:
/etc/HOSTNAME ## For hostname
/etc/sysconfig/ ## For ip, gateway, etc.
