- manually edit the /etc/wvdial.conf file
- manually create /etc/sysconfig/network-scripts/ifcfg-ppp0
The format of ifcg-ppp0 is poorly documented, but some help for it can be
found in the Red Hat 8 sysadmin guide.

It's in bugzilla many, many times, with nary a peep from the fine folks at
Red Hat.
If there's no way around it in the configurator, what other options do I
