Electronically it's probably not very hard.  Almost certainly the volume dial 
is a variable resistor, so it would be just a matter of removing that component 
and replacing it with a switch that has (essentially) 0 resistance.  I've done 
somewhat similar projects before, and it's not hard.

Mechanically, it would be a matter of finding a switch that fits, more or less, 
into the space given.  The difficulty in this is aminly a function of how 
important the overall aesthetics of the final result are.
