Matt,
  This question comes up on the various SF lists every
  couple of weeks, and there are several answers, but my
  favorite is to use VNC, set it to only accept connections
  from localhost, install an ssh server on the server, and a
  client on your W2k desktop, use ssh's port forwarding to
  connect to the vnc server.

  I'm sure you'll get some other suggestions, as well.
