It's an old story. They're probably running IIS behind a Linux proxy or something

Yes and no. We used to have a load balancing cluster of Windows 2000 IIS
servers behind caching (proxy) servers running Linux and caching software
from Inktomi. This setup also showed up in Netcraft as IIS5.0 on Linux,
although it obviously wasn't entirely correct...

You cant trust in everything you see.
You can fake it very very easy. In apache, for example, if
you change the config file httpd.h (i`m not sure if the name is correct)
you can change the server name for whatever you want.
It seens to be only a joke from the sys admin from there.
