Reid, I don't stir my CS because I use ten 1-gallon jars, and trying to set up ten stirring mechanisms is too much trouble.
After "seeding" each gallon with 1-quart of CS (+ 3 quarts DW), I brew it for exactly one hour, no more. This is using 110 VDC. My experience with using a 10-gallon fish tank and 400 VDC (I had a stirring motor and plastic propeller) was that the CS always turned yellow or gold, which doesn't worry me, but I like to sell clear CS. My silver wires never have much stuff on them, it just wipes off. Nothing floating in the water, except sometimes stuff falls off one of the wires when I pull it out of the jar. I then pour the CS through an "oxygen cleansed" coffee filter, and the CS stays clear a very long time. The main reason I quit using the 400VDC (apart from the CS color) was that, if I adjusted the current down to about 20 ma (in order to minimize the CS turning yellow), the voltage dropped to 100 volts. I can get that exact combination with a 110VDC rectifier without fooling with it, every time, and the CS is crystal clear (as long as I don't brew it more than an hour). In your case with having 220-240 volts, you will have to experiment. Try the 1/4 CS seeding with 3/4 DW and run for 20-30 minutes (since you're using twice as much voltage as me). If you are only brewing one jar, set up a stirring or bubbling device. I haven't needed it, and it didn't seem to help much with 400 volts, so I have little experience with stirring. Since I can make 7 1/2 gallons/hour net, I have never bothered with heating the water either, the energy it would take to heat 10 gallons is too much and too time consuming. If need be, I can make 50-60 gallons per day, so I feel no need to speed the process up. Bob Berger tested my CS and pronounced it very small particle size (almost no Tyndale effect) and 12.3 ppm. Perhaps it can be made more efficient than this, but the response from the doctors, pharmacists and my clients is satisfactory for me!
