Booting from SAN is no issue as you've surmised.
Additionally 4.6 will allow for media services to be moved off master.
Commercial release will actually allow for redundant media servers
(multiple servers).

The core response sounds about what I would expect, the more load the more
likely to have jitter problem. Another way to gain the snapshot and mobility
(more limited) features that vmware would give is a boot from SAN
