More a network question, but that's my main job.

Normally this should work, 5 phones don't generate a lot of traffic, 
especially when not in a call.
But a few suggestions:
You say you connected a hub, replace it by a small 8 port switch, if 
budget allows a managed one.
- a hub is half-duplex shared, if one device sends the rest has to listen 
(walky talkie-style).
- a switch is full duplex, not shared. One device can send and receive at 
the same time.
- you can't really troubleshoot a hub

What's at the other end of the link, probably a switch.
- what is the current port speed
- what  is the current duplex setting on the central switch port, to 
connect a hub all is good except fixed-full.
- what/how many mac-addresses can you see on the central switch port

How is the link
- Test the same setup on another link, or better connect the hub directly 
to a central switch port

IP-addressing
- Is the DHCP range big enough
- Connect a laptop as third device and look at IP-settings etc
