I used a lot of silkspan and Jap tissue on my Nordics and Wakefield models. If I was going to recover the thing, I used 320 or 400 sandpaper and sanded through it down to the wood. That way I didn't remove enough wood to change things, and it went slow enough as to not mess things up. I've done the same with Monokote on very delicate parts, like thin rudders and stabs. Takes a while but the results are good.
