I like Debian, I find it easier to understand then Ubuntu and more
powerful. (I use the command line a great deal more than the desktop, but
I running Gnome, and it works ok). With Ubuntu I kept having
incompatibility issues with pre-built packages and ended up having to
compile form source more
You should consider one of the BSDs, like FreeBSD. It's not too big a
leap from Linux if you are very familiar with that OS. Running actual
services is essentially the same.
Actually though, OpenBSD is supposed to be the most secure, but you
might have to eventually deal with Theo de Raadt. 8(
