This doesn't work:
select field1 from table1 where field1 like '%FH%*%'
as the * character here seems to be ignored.

You're doing it right. Either you use a wrapper that messes with * in
litterals or there is

Glob works fine as well with the [*] and is still case-sensitive and
that is how it is intended.
So this works fine:
select field1 from table1 where field1 glob '*FH*[*]'
