perhaps you have solved the update issue and I just don't know about it.
I'm no Linux expert but I see that Plex is using a programme called Snap
to update. Is that perhaps an option for LMS too?

I'm reading a lot about how awesome Pandora is but unfortunately I'm
living in Europe.
Is there a way to get LMS working with Pandora in Europe?
Would be nice if the Pandora plugin had a option to use a US vpn
connection but I wonder if that's possible.
Any ideas?

It's a legal limitation, not a technical. Pandora is not allowed to
stream to Europe. You're not allowed to use it in Europe. B
Bummer, was afraid of that. I can't expect from the plugin designer to
do illegal things. Pitty, was curious about Pandora.
