it should be possible to provide only the uri attribute in each of the
serial routes. To URI should not be overwriten in such case. Can you get
the debug messages for such case with debug=3 in kamailio.cfg as well as
the pcap file with the sip traffic?

Hello,
5.1.1 is really old and countains many bugs, some of they are also security
relevant. It is not maintained anymore since some time as well.
My suggestion would be to upgrade to the latest available 5.3.x stable release
(or even upcoming 5.4.0) and forward port
