Here is how I solved the problem :
1. I removed sweets-distribution with aptitude
2. I updated my Xubuntu packages
3. I installed sweets-distribution with aptitude

I solved it on this morning :
1. removed sweets-distribution
2. updated my xubuntu packages
3. reinstalled sweets-distribution

=> Now the menu Education->Sugar sends me an emulator ^^

I did a full update of xubuntu-11.10-desktop-amd64 [1] before I
installed Sweets_Distribution [1]
I am on the jabber.sugarlabs.org atm using sugar-emulator
Logout gives these selections in the Login Box Dropdown List:

I too have tried this, and it works. But as I have used a 32-bit build,
and not 64-bit as you have, my test is invalid.
Your problem was that selecting the menu option for Sugar gave an error.
Could you please try starting a Terminal and then type:
sweets-sugar-emulator
