I figured out a way to plot EoT curve which I didn't see in sundial books I
own.

I’m pretty sure there was one of these in an early version of Jane Walker’s
“Make a Sundial” British Sundial Society publication.
There is also one on the rear of Jim Morrison’s astrolabe.

The equation graph projected on a circle is used as a kidney piece cam in
a watch movement that can indicate the equation.
Here is a picture of the gear carrying the kidney piece. It turns once a
year.

Even if you could get equalspacing, aspect ratios would still be a problem.
My solution was in both my Excel and Open Office spreadsheets (see my website)
to also print a square box with diagnols to show a V or an A.
Then changing manually the X span of the chart until the V or A apex measured

It's not easy, as I have also found.
Here's a hint to the procedure. The author's intent is to force a certain
aspect ratio on the chart, for the best visibility of trends. Interesting
concept, in itself...
Another suggestion farther down, below the == bar.
