Hi Valentin what do you think about a fin to fold ?The stability of the gnomon depends on the latitude too, i might draw 2 fins with latitude over 30 or 40°.

I also want to add a possible improvement. It concerns Paper dial No 4. Attached is a picture of an additional drawing, which allows to keep the gnomon perpendicular to the plane. Perhaps there are some other construction, e.g. origami ones (Wee-Meng Lee is an origami specialist, see http://leewm.freeshell.org/origami/) and I hope all we could help with ideas for further improvements of the constructions.
