Water in the reaction inhibits the formation of the biodiesel, therefore must be excluded 99.9%. What happens is that the hydroxide forms soap, resulting in the classic "chicken soup". Commercial methanol will have a little water in it, so only accept unopened cans - it will absorb it if exposed.
