Problem solved. I forgot to check if Navicat is enough smart (as i
supposed to be) to handle utf8 fields correctly. Field is inserted and
retrieved correctly through Symfony and Propel.

Forgot to say a thing: i get the same problem with every similar
character like è, à, ò, ù, but not with &, % (the only ones i
tried).
