There is actually a setting deep in Edge's options that controls what happens when you search with Cortana in the Anniversary Update. If you open Edge, and find the More button and then choose settings, followed by View Advanced Settings you can find this. At that point it is faster to shift+tab and there is an item that says Optimize Task Bar Search Results for Screen Readers. If you turn that on, searches such as you've described will open in Internet Explorer specifically.
