Is there a way in Window-Eyes to redirect speech to come through the
headphone jack instead from the pc-speaker like in NVDA and JAWS? If
yes how to do it?

You'll need to be using a different sound device for your speech. Then
you can direct it to that device, with headphones coming out of it, via
the synthesizer setting dialogue. Select the speech synth, and tab to
the combo box which lists the available sound devices.
