I can’t answer all your questions, but, here are the ones I can answer:

Has anyone used Nvda? If I have Nvda and WindowsEyes would my need of what Jaws 
does itself get fulfilled?

I use Window-Eyes and NVDA all the time.  I have also used JAWS, but, I don’t 
own it, so I have to use the demo.  If you have Window-Eyes and NVDA, you can 
do quite a lot, and you probably wouldn’t need JAWS at all.

However, I don’t use the MicroSoft office products much, so I don’t know which 
screen-reader has the absolute best support.  

If I get WindowEyes through the Microsoft Office offer will the Package include 
everything in the paid package of WindowEyes?  

Window-Eyes for Office is a download-only product.  Also, you do not get the 
high-quality speech synthesizers that normally ship with the paid version of 
Window-Eyes.  With the Window-Eyes for Office offer, You can use either a voice 
called Zira from MicroSoft, Hazel from MicroSoft or the free ESpeak 
synthesizer.  If you don’t like those, you can purchase the higher-quality 
speech synthesizers for the Office version.  Also, if you download the version 
for Office, you do not get free support
