Great program, I'm willing to use it but the OSM data download does
not work with my regional settings (Spanish). I have to change the
settings to something like UK to have OSM data. Map tile downloads
work well, however.

Why not using the route relation[1] for this? You can combine all type of
paths/roads with that relation, add the name, the ref (E-...), the network
(Gran Recorrido GR, Pequeño Recorrido PR, Sendero local SL) and even a
symbol for the route.

Yes, I had to reconfigure it, changing the threshold from 15 to 5 pixels to
make it work smooth (edit.initial-move-threshold=5). Look at this thread:
