I don't know when you have added the new ui elements to the folding mechanism,
but they work beautifully on mobile. I'm talking about the button to collapse a
tiddler in the left side of each tiddler and the unfold button at the bottom.

"Unfold all" is in the sidebar tools menu; with the checkbox you can get it
displayed in the page toolbar.
