I have repaired several with this problem.
If you want I'll contact you off list with the details and PIX.
Very basically:
Dig out potting (don't start until I send details!)
remove oven cylinder
rewind oven coil
add new thermistor if needed
install and wire new oven
measure temp and sele
Exactly what I did but I found a correct modern transformer for the crt I
fixed with the short.
Something from Digi-key with the right isolation.
That said its an approach that can be considered.
