I'm using the AR-T Legato S/PDIF converter. It is a USB Class 1 device.
I did not put a USB hub b/w it and SBT, but in order for it to work, I
have to disable (turn off) the USB 1 No-Hub Workaround.
I wonder if the flat indicating this setting is incorrect or am I
missing something.

Whether a 7" tablet is going to be big enough from across the room is
going to depend very much on you and your eye sight. Subjectively they
are quite a bit bigger than the screen on the Touch. But of course a 10"
is quite a bit bigger.

My only real complaint about the Touch is that the screen is too small
to be useful once you get about 7 feet away.
Anyone have an idea if a 7 inch tablet screen would be large enough to
solve this problem? Or do I need to go up to a 10 inch to have the
screen usable at 7-10 ft. distances?

Can your Touch navigate to Internet Radio on the main menu and play a
station?
If running LMS on a PC/Mac go to LMS > Control Panel > Diagnostics, what
is reported for ALL pings, ports, IP's?

Is there a saved Playlist with the same music on the SD card? There are
instances of this duplication listing when using the full LMS on a
computer and the music files and Playlists are in the same folder
directory. i.e. Scanner is seeing Playlists as songs.
