Here's my problem: The mixes of many Spotify songs I hear on my
Squeezebox Touch are really weird. For example, on some Dean Martin
Reprise material, it seems like the instruments are mixed way down low,

I have the applet's stream setting at Highest Bitrate, but even if I
set that to WMA my devices won't play on-demand from the stations I
listed. It makes no difference if I use mysqueezebox.com or LMS on my
PC. All the stations play OK on my PC
There is a 7.8 firmware for the touch. I don't know if it's official or
not but it works great for me, in conjunction with the 7.8 server.

You have not simply inverted the phase of one of channels on your stereo
? And listen to mono versions of some of these older songs ?
