You can use a 3.5" display, just the size of the RPi, that mounts as a
shield.
It's cheap and resistive, but works ok with pCP and jivelite and some
tuning.

Thanks for the tip regarding a nano router, I'll try that (the other
solution would be to replace the Touch with another pCP (without a touch
screen, as the official RPi display is to big for the place it needs to
be).

AP/Client mode and plug it into Touch Ethernet port.
