I really have no need for album artwork to be displayed (when it works)
and would rather have the whole screen available to display song title,
artist, etc. I couldn't find an option either on the Touch or the Server
to disable artwork. Can this be done?

No, they were downloaded from iTunes within the last month. iTunes
hasn't used DRM for years, as I understand it.
