I rushed into conclussions.
I think I bought a fake usb stick :( Its brand new and it doesent work
properly.
I will try to sort it out.

FWIW it isn't just Squeezebox Touches that this issue occurs on. I have
about a dozen USB sticks floating around and I regularly find USB ports
on PCs that one or more of them won't work on. Admittedly most of them
are very cheap and nasty ones.

Yes, it will. Yes, all of them.
That's further than two of my USB sticks ever got.
Touch's server won't even recognize their presence (automatically or
manually selecting "start server").
On the other hand, another USB stick and a 160gb Iomega eGo USB HD work
flawlessly with Touch's server.
It's just a USB crap shoot. :)

The stick is formatted in fat32.
I put about 60 GB on the 128 gb-stick.
Touch finds the stick.
I have to manually choose "Start Squeezebox server"
When I go settings/advanced/squeezebox server the status say that 5% of
the Scanning is done and about 1:21 hours still to go.

As far as the Touch is concerned the filesystem type does not matter as
long as its one of
FAT32, NTFS. EXT2 or EXT3.
How that relates to Macs I have no idea. My guess is to just use
whatever works with the OS on the computer.

Touch scan and plays small amounts of music on the Kingston 128 GB usb
stick.
But when I put a lots of GBs on it, it fails and behaves strange :(

Some USB sticks and HD's simply will not work with the Touch.
I have a brand new (purchased retail 90 days ago) PNY 2gb USB stick
that works flawlessly with every device I've ever connected it too.
Except the Touch. :(

I had to reformat it with fat32. Now it works (it seems).
It takes ALONG time though to transfer 100 GB of music (like 20 hours
about)
Then, hopefully, I have a cool silent storage soloution.

When I try to acces my usb stick connected to the Touch from my macbook
via the loval network I succed. But when I try to open the folders
inside the usb stck i fail and this message comes up instead:

The Touch will Read/Write a FAT32. (As well as NTFS).
