No, I don't think the new method of menu customization is in 7.5.3. In
7.6 you touch-hold an item to bring up a context menu that lets you
move

Try it and you'll understand. Adding more options for customization
required a different interface, and having two different ways to
customize, with two different sets of capabilities, would be dumb
Before it was possible to change home menu using the remote, now i have
to touch the touch which is few meters apart from my listening

No, you don't have to touch the Touch. If you want to customize the menu
using the IR remote, simply use the + key to access the context menu.
Benefits? You can customize sub-menus and re-order menus and sub-menus.

I installed on my QNAP SBS 7.6.0 - r32064 and it works better than
7.5.3 .
Using it for two days and no bugs yet :)
Scanning the library, going through menus etc is much faster, i
downloaded and installed the version for arm cpu without firmware
updates, because even when sbt is connected

The current version is 7.6.0 r9316. The reason that you're not getting
any notifications to update is that your Touch probably already has the
latest version. Note the date on that file
