Choose manual setup on the installer page where you are given the
options like 'install Trisquel along-side Windows' and 'replace Windows
with Trisquel'. I think the option you want says 'something
else--manual setup'. Select your drive, and partition as you prefer.

You'll want to choose the advanced setup option and set up the partitions
manually. At a minimum, you ought to have:
