I think you should switch from TYPO3
Not the php logs
check inside TYPO3 what you did before you weren't able to map again
simply go back to the point where it happend.
Deinstalling extensions is quite easy
1. go into your localconf and create a copy of your extension list and make
it inactiv (put // infront of the line

My experience is that TV is not affected by any of the extension,
at least not in the BE.
So mapping should just work...
In the older versions of TV H had indeed once some mapping problems.
Create a new DO/TO usual worked fine. And don't try to map two
different templates because TV stores a lot
I have tons of exts and the last time I used TV was months ago.
It would be impossible now to go back to see what ext causes the issue
by uninstalling them.
How to see logs of TV ? I do not see anything in php logs.

and install it again

create a NEW template don't use the old one
--
try to import an existing TV template and check if you can change this
mapping
to do so go here - demo.webempoweredchurch.org download one of their TV
templates and the right .t3d
Install it and see if

I simplified the HTML to this one and it still does not want to hold the
mapping of CO to the body. I map CO to the body and looses that mapping
right away when I try to map another element on the div.
Is there some kind of caching that should be cleared?

if this is possible for you, I can highly recommend this way of working.
For FCE's you might not want to use that method because it might
replicate id's under some conditions.
