Which version of Ubuntu are you running? In Ubuntu 12.04, it looks like you can do this by hitting alt+f1 and arrowing down to system settings. Arrow over to and press enter on brightness and lock and you'll end up in a dialog where you can set how long before the screen saver comes up. On 12/08/
