I have the same problem, all settings under the printer properties are set to Letter, yet Evolution still tries to print to A4. Manually changing the DefaultXX lines in /etc/cups/ppd/.ppd to Letter from A4 allowed it to print to Letter. Which indicates to me it is a problem outside of
