Problem is that there was a bogus configuration element

workaround is to manually edit configuration file in
.config/evolution/mail/sources

to find the problem file do

grep ^Email= *

And you'll find a file with a line saying

Email=

Change this file to add your actual sending email and the message will
go away (and email will now send correctly)
