Server kernel is configured with PAE support (i.e. > 4GB support). Not all CPU's support this (Mostly laptops that don't...)
Just about nobody needs it anyway, even on a "server", it makes things slower if you don't need > 4GB of ram (And anyone with > 4GB should get a 64-bit platform anyway ;) ) In any case, the installer should check for support for this bit (/proc/cpuinfo ;) ) and install a non-PAE kernel by default if it isn't supported.
