unison is not a dependency of unison-gtk. Unison-gtk package is unison compiled with lablgtk. Unison package is unison compiled with a text user interface.
There is a dependency between unison and unison-gtk but it is bound to using unison to synchronize across the network. In this case, unison should be installed on the other computer. In debian there is no way to stat this kind of dependency : unison-gtk on computer A depends on unison on computer B I don't think there is a way in ubuntu...
