When toggling the dark style preference via the quick settings, if the
icon theme is something other than Yaru like Adwaita, then toggling will
change the icon theme to Yaru. When toggling dark style back and forth
via gnome-control-center the icon theme is respected.

I'm certain that isn't the case, as I normally don't even have my hand
on the mouse until I've landed on the desktop. My mouse is pretty much
always in the bottom right of the screen after logging in
