This has been going on for a while. I found an article that suggested a
solution for the disappearing icon be to add the .desktop file. I would
certainly be interested in a better solution. Changing to "current"
seems to have worked but I sense you hinting there is a larger problem
in having to acc
I should have mentioned - I can go in and update
chromium_chromium.desktop with the new location, the icon appears and
everything works fine.

~/.local/share/applications/chromium_chromium.desktop and update the
location of the icon. I think this is something happening when an update
happens. For instance Icon location:
