NM should notice changes
If I use network-admin and I set a manual configuration, the internet
connection (wireless) doesn't work anymore, but NetworkManager doesn't
crash.

If you use network-admin, then do you mean that NetworkManager crashes?
Or that the internet connection does not work? Or both?
After that happens, please give me the output of
ifconfig
pidof NetworkManager
pidof nm-applet
and attach /var/log/daemon.log.

The problem is that I cannot manually configure my wireless network. In fact,
if I turn on "roaming mode", it works perfectly, but if I want to configure
